Quick and easy banana oat pancakes
These pancakes are made in the blender and take only 10 minutes to whip up!

1/2
cup
rolled oats
1/2
banana
Use the other half for toppings
1/4
cup
oat milk
Or other plant-based milk
1
tbsp
maple syrup
1/2
tsp
baking powder
1
tsp
vanilla extract
1/4
tsp
cinnamon

sea salt
Instructions
Put all ingredients into a high speed blender and blend to smooth. Add a little more milk if the mixture is too thick.
Heat a small frypan with some olive oil or vegan butter over a medium heat.
Pour half the mixture into the pan, and cook for a couple of minutes until the underside is browned and the top is starting to set.
Gently flip the pancake - I find it easier to actually flip it in the pan rather than use a fish slice.
Cook for another couple of minutes and then slide out onto a clean towel. Cover while you cook the second pancake.
