Quick and easy oat & banana pancakes


Quick and easy banana oat pancakes
These pancakes are made in the blender and take only 10 minutes to whip up!
Ingredients
- 1/2 cup rolled oats
- 1/2 banana Use the other half for toppings
- 1/4 cup oat milk Or other plant-based milk
- 1 tbsp maple syrup
- 1/2 tsp baking powder
- 1 tsp vanilla extract
- 1/4 tsp cinnamon
- Pinch sea salt
Instructions
- Put all ingredients into a high speed blender and blend to smooth. Add a little more milk if the mixture is too thick.
- Heat a small frypan with some olive oil or vegan butter over a medium heat.
- Pour half the mixture into the pan, and cook for a couple of minutes until the underside is browned and the top is starting to set.
- Gently flip the pancake – I find it easier to actually flip it in the pan rather than use a fish slice.
- Cook for another couple of minutes and then slide out onto a clean towel. Cover while you cook the second pancake.
