Quick and easy oat & banana pancakes

Quick and easy banana oat pancakes

These pancakes are made in the blender and take only 10 minutes to whip up!

Ingredients
  

  • 1/2 cup rolled oats
  • 1/2 banana Use the other half for toppings
  • 1/4 cup oat milk Or other plant-based milk
  • 1 tbsp maple syrup
  • 1/2 tsp baking powder
  • 1 tsp vanilla extract
  • 1/4 tsp cinnamon
  • Pinch sea salt

Instructions
 

  • Put all ingredients into a high speed blender and blend to smooth. Add a little more milk if the mixture is too thick.
  • Heat a small frypan with some olive oil or vegan butter over a medium heat.
  • Pour half the mixture into the pan, and cook for a couple of minutes until the underside is browned and the top is starting to set.
  • Gently flip the pancake – I find it easier to actually flip it in the pan rather than use a fish slice.
  • Cook for another couple of minutes and then slide out onto a clean towel. Cover while you cook the second pancake.
